La pellagra è una malattia causata da una carenza o dal mancato assorbimento di niacina (detta anche vitamina PP o B3). Oggi, questa patologia colpisce in forma endemica alcune aree del mondo (Africa, Sudamerica o certe regioni dell'India), dove il mais e la farina di sorgo costituiscono alimenti base nella dieta.
