Con il termine amiloidosi si intende un gruppo di condizioni rare, ma gravi, causate da depositi di proteine anomale, chiamate amiloidi, nei tessuti e negli organi di tutto il corpo. Le proteine hanno origine da una serie di aminoacidi che si piegano in una forma tridimensionale.

La diagnosi è con biopsia; il tipo di amiloidosi è determinato da una serie di test immunologici, genetici e biochimici. La spettrometria di massa è il metodo più sensibile e specifico per la tipizzazione dell'amiloide.
